Chet’s Polish Kapusta Soup

3 Lbs pork ribs with bone on
12 Cups water
1 Small head green cabbage – chopped
2 Lbs sauerkraut – drain juice and save
1 Large onion – diced
1 Lb salt pork – diced
1 Large potato – peel and grate into soup
Kielbasa – optional

In a large 8 quart pan add pork ribs to water, bring to a boil; then to a simmer. Skim off top layer. Meanwhile in a separate pot, add cabbage to boiling water and simmer for 10-15 minutes.  Drain, then add to pork rib pot. Meanwhile, add diced salt pork to fry pan and fry until almost crisp, then add onion and cook until wilted. Add to pork rib pot. Drain sauerkraut and add to pork pot. Take potato and grate it into pork rib pot. Simmer for 40 – 60 minutes, add paprika for color and pepper for taste. Optional: boil kielbasa and slice then add to soup when done..
