Kielbasa Casserole

1 cup onions, chopped
2 tablespoons butter
1 medium cabbage, shredded
½ cup water or apple juice
2 apples, pared
1 pound of kielbasa, sliced
¼ cup brown sugar
¼ cup cider vinegar
1 tablespoon melted butter
1 teaspoon salt
½ teaspoon pepper
½ teaspoon dry mustard

Saute onions in 2 tablesppons of butter until golden.  Add cabbage and water.  Cover and cook for 7 to 8 minutes until cabbage is barely tender.

Core and chop one apple; combine with kielbasa and cabbage in a 2-quart casserole or a 13 x 9 inch pan.  Core and slice remaining apple, arrange slices over casserole.  Mix sugar, vinegar, melted butter, salt, pepper and mustard.  Pour over casserole and cover; bake in a 375 degree oven for 40 minutes or until apples and cabbages are tender.

Serve with rye bread and pickled beets
